Easy Spinach Recipes The Little Ones Will Love!!

Earlier this week, we shared the health benefits of spinach.  Here are a few recipes that are easy to make, nutritious and sure to be a hit with the little ones!

Green Applesauce

1/2 C applesauce, either store-bought or homemade

1 handful of organic raw spinach leaves

Preparation: Combine all and blend until smooth!

Spinach Calzones (makes 8)

Refrigerated whole-wheat pizza or bread dough

Filling:

3/4 cup mozzarella cheese(optional)

1 cup marinara sauce

1 cup chopped fresh spinach

Preparation:

  1. Allow dough to come to room temperature.
  2. Roll out a small portion of the dough at a time, cutting two equal sized hearts with a cookie cutter.
  3. Fill middle with filling, thin layer marinara sauce, cheese, and spinach, and then crimp edges with a fork. Set on baking tray.
  4. Bake at 400 for 10-15 minutes until lightly browned. Test to make sure dough is done baking. Serve with marinara sauce for dipping.

**Try adding additional filling options such as peppers, olives, fresh basil, black beans, broccoli, etc.
